Banana Muffin
INGREDIENTS
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 large bananas, mashed
- 3/4 cup white sugar
- 1 egg
- 1/3 cup butter, melted
DIRECTIONS
- Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda, and salt; set aside.
- Combine bananas, sugar, egg, and melted butter in a large bowl. Fold in flour mixture, and mix until smooth. Scoop into muffin pans.
- Bake in preheated oven. Bake muffins for 15 minutes, muffins will spring back when lightly tapped.
Just wanted to pass this yummy, and pretty healthy recipe on. I have a disclaimer though (I HATE bananas) seriously can’t stand them! It’s a texture thing. But I purchased a bunch of green bananas (the way my hubby and kids like to eat them) and the next morning they were brown! So I went in search of a recipe I wanted something without walnuts like banana bread, although I am sure you could add nuts as an option. I found this banana muffin recipe and it had a 5 stars rating and tons of awesome reviews, so I made them… Let me tell you, I even LOVE them! My kids thought I made cupcakes… This was a big hit with our family.
